Wash and chop the spinach leaves. Soak the dried fish for an hour and then chop finely, removing any bones and skin. Heat the oil in a pan. Fry the chicken until partly cooked and add a few cups of water. Stir and cook over a low heat for several minutes.

Cook over a low heat, stirring frequently (do not add any more water) until it has thickened slightly. Serve with rice or Fufu (yam mash).
